I made this last week. Made bread crumbs from whole wheat bread and seasoned them with a bunch of herbs and spices, pounded the cutlets fairly thin, soaked them in milk for a couple of hours before breading them. They came out extremely tender and delicious. Why do you soak them in milk? What does that do? |

Why do you soak them in milk? What does that do? It helps to keep the chicken tender and moist. Otherwise, it's easy for chicken that's fried to become dry and/or tough. I think you'd find that most cooks down south, when making real southern fried chicken, soak their chicken in milk or buttermilk before coating it. |

what I'd want would change from day to day, but, you can't go wrong with a couple of baked stuffed shrimp or stuffed mushrooms to start, homemade fried chicken with mashed potatoes, spinach and a big glass of iced tea. strawberry shortcake for dessert.
Tonight I'm making dinner for my brother and his wife, last week was his birthday. We're having his favorite, Roast Beef, gravy, Green Beans, Mashed Potatoes, Rolls and an ice cream cake from Cabots for dessert. |

Hmmm...
I like food. All kinds. So it's hard to narrow it down. Let's see.... A salad of bitter greens with grilled pears & beets, and goat cheese. Seared duck breast MR w/ a savory (maybe walnut & blue cheese) bread pudding, and some grilled asparagus. A dense cappacino/chocolate cake. To drink: An IPA and maybe a nice single malt scotch for after dinner. |
